Strawberry pancake Stack

method

  1. To make the pancakes, put the flour, eggs and milk into a bowl and whisk together.
  2. Heat half a teaspoon of Trex or olive oil in a medium-sized frying pan. Add about 1⁄5 of the mixture. Tip it around until it forms a pancake approximately 20cm diameter.
  3. Fry on a medium heat until it browns (you can check this by lifting an edge of the pancake a little to look underneath). Using a fish slice, carefully flip over the pancake and cook the other side until it browns.
  4. Once cooked on both sides, remove from the pan and repeat with the rest of the batter.
  5. Melt the chocolate in a microwave.
  6. In a mixing bowl, beat the cream together with a whisk (an electric one if you have one).
  7. Layer the pancakes with the cream and strawberries in between.
  8. Save some good strawberries for the top. Put a good blob of cream on the top and decorate with the strawberries. Drizzle over the chocolate. Slice and serve.

  • 1 1/4 mugs (350ml) milk
  • Trex or olive oil
  • 500g strawberries, chopped
  • 300ml double cream 150g chocolate
