Sausage and Bean Hash

method

  1. Fill a saucepan with enough water to easily cover your potatoes when they are cooking. Add a pinch of salt and bring to the boil. Add the potatoes and simmer for 8 minutes.
  2. Once cooked, drain the potatoes using a colander, and set to one side.
  3. Meanwhile, heat the oil in a large frying pan. Add the sausages and fry until they begin to brown.
  4. Add the onions and fry for 1 minute.
  5. Add the potatoes and fry until everything browns. Season with salt and pepper.
  6. Add the beans and fry for 1 minute.

Ingredients

  • 5 medium potatoes, cut into chunks
  • 2 tablespoons olive oil
  • 8 sausages, cut into chunks
  • 1 red onion, sliced
  • 400g tin haricot beans, rinsed and drained
