Avocado & Puy Lentil Salad
method
Mix together the dressing ingredients.
Arrange the herb leaves on the plates.
Mix together the salad ingredients (apart from the feta) and divide between the 4 plates. Sprinkle the feta over the top.
Add the dressing.

juice of 2 limes
2 tablespoons olive oil
1 teaspoon sugar
salt and pepper
bag of mixed herb leaves
400g tin puy lentils, drained and rinsed
250g cherry tomatoes, each cut in half
4 spring onions, chopped
1 yellow pepper, chopped
2 ripe avocados, peeled and cut into chunks
1 tablespoon freshly chopped parsley
1 tablespoon freshly chopped coriander
handful pine nuts
100g feta cheese, crumbled
