DIY Takeaway Lemon Chicken

This dish is incredibly easy to make and tastes delicious. This recipe will cost a fraction of the price you would pay for a ‘takeaway’.

  1. Put the rice on to cook.
  2. Heat the oil in the frying pan. Add the chicken breasts. Season well with salt and pepper. Cook on a high heat for 2 minutes each side. Turn down and cook on a low heat, with the lid on, for a further 4 minutes each side. Remove from the heat and set to one side.
  3. In a saucepan, mix together the sauce ingredients until smooth.
  4. Once combined, gently bring to the boil. It should thicken. Add the slices of lemon and gently heat for 1 minute.
  5. Slice the chicken breasts and serve with the sauce and spring onions.

Ingredients

  • 1 mug basmati rice
  • 1 tablespoon olive oil
  • 2 chicken breasts
  • 1⁄2 lemon, sliced
  • 2 spring onions, thinly sliced

Sauce

  • 2 teaspoons cornflour
  • 3⁄4 mug cold water
  • juice of a lemon
  • 2 tablespoons granulated sugar
