- Boil some water in a saucepan. Once boiling, add the tagliatelle. Cook for approximately 4 minutes or until tender. Drain and return to the pan. Add a few drops of olive oil and stir well. The olive oil prevents the tagliatelle from sticking together.
- Mix the dressing ingredients together.
- Put a little oil in a frying pan and fry the spring onions and the chilli for about 30 seconds.
- Add the tuna, olives and the thyme to the pan and cook for 1 minute only, stir occasionally.
- Tip the contents of the frying pan into the tagliatelle pan and carefully mix together.
- Serve on the plates or bowls and drizzle the dressing over.

- 6 spring onions, chopped
- 1 fat red chilli, deseeded and cut into thin rings
- 2 tuna steaks, cut into 1” square pieces
- 15 black olives
- 1 dessertspoon fresh thyme leaves
Dressing
- 2 tablespoons olive oil
- 1 teaspoon sugar
- juice and grated zest of a lime
- salt and pepper
