Very simple pancake recipe

simple pancake recipe for pancake day

  1. Beat the eggs and flour together in a bowl or jug. Gradually add the milk, making sure there are no lumps. The mixture should be as thin as single cream, i.e. quite thin, but not as thin as milk.
  2. Heat about 2cm cube of white Flora in a frying pan. When the fat begins to smoke a little, pour approximately 2 tablespoons of the mixture into the pan. Tip the pan around so that the mixture spreads over the surface of the pan. Let the mixture cook for about 1 minute.
  3. Gently lift the edge of the pancake to see if it is browned. Once browned, turn the pancake with a slotted turner, or toss and then cook the other side.
  4. Serve with lemon juice and sugar, undiluted squashes, any kind of ice cream, maple syrup, golden syrup, fruit such as strawberries, jam or ice cream.

  • 2 eggs
  • 6 tablespoons self-raising flour
  • milk
  • Trex or white Flora to fry (you can use oil but a lard type is best)
