Pork steaks are quick and easy to cook and relatively inexpensive. If you cook them too slowly they will become tough and dry, so I recommend a high heat and quickly browning them while leaving the centres still quite tender. We still need to cook pork through, as it cannot be eaten rare.
- Heat one tablespoon of oil in a large frying pan. Add the potatoes and season well. Leave to cook on a medium heat, with a lid on the pan. Shake the pan every couple of minutes to make sure the potatoes are evenly browned. Takes about 15–20 minutes for them to brown.
- Meanwhile, grate the beetroot and the apple and mix with the cider vinegar and sugar and season.
- Once the potatoes are 10 minutes into cooking, put the paprika on a plate and mix with seasoning. Press the steaks into the mix so they are evenly coated. Heat the other tablespoon of oil in a separate frying pan, add the pork steaks and cook on a medium heat for 2 minutes each side. This is for steaks approximately 1cm thick. Pork needs to be cooked through and not rare.
- Serve the steaks with the potatoes and the relish.
