Honey Mushroom and Rice Pie

method

  1. Preheat the oven to 200ºC fan oven/220ºC/Gas 7.
  2. Put the mug of water on to boil. Add the rice and pilau rice seasoning and bring back to the boil. Turn down to simmer for 10–15 minutes.
  3. Heat the oil in a pan and fry the onions until they become soft. Add the pine nuts and fry until they become slightly brown. Add the mushrooms and fry for 30 seconds. Add the fennel seeds and the honey. Season with salt and pepper.
  4. Put half the onion and mushrooms on the bottom of a small casserole dish. Put the rice on top, with the rest of the onions and mushrooms on top of the rice.
  5. Unroll the pastry and place on top of the pie. Cut to size and pinch the edges. Brush the top with beaten egg.
  6. Place in the oven for 20–25 minutes until browned on top.

  • 1 tablespoon oil to fry
  • 2 onions, sliced
  • 100g pack pine nuts
  • 250g pack mushrooms, sliced
  • 2 teaspoons fennel seeds
  • 2 teaspoons honey
  • 375g pack ready-rolled puff pastry
  • 1 beaten egg
  • salt and pepper
