Gluten-free Double Chocolate Chip Muffins

method

  1. Preheat the oven to 180˚C fan oven/200˚C/gas 6. Prepare 18 muffin cases in tins.
  2. Put the dry ingredients in a large bowl.
  3. Mix together the wet ingredients in a large jug and add to the bowl. Mix well, but do not beat.
  4. Spoon into the muffin cases. Makes 24 using small cases, or 18 if using large.
  5. Bake in the oven for 25 minutes. The muffins should spring back when gently pressed. If you use smaller cake cases, you will only need to cook them for about
  6. 20 minutes.

 

Ingredients

  • 1 1⁄2 mugs/300g GF self-raising flour. Take out 2 tablespoons of the flour and replace with 2 tablespoons of cocoa
  • 1 teaspoon GF baking powder
  • 1 teaspoon xanthan gum
  • 2⁄3 mug/175g caster sugar
  • 100g packet chocolate chips
  • 2 eggs
  • 100g melted butter, measure
  • using packet
  • 2⁄3 mug/200ml milk
