Gluten-free Double Chocolate Chip Muffins

Ingredients
- 1 1⁄2 mugs/300g GF self-raising flour. Take out 2 tablespoons of the flour and replace with 2 tablespoons of cocoa
- 1 teaspoon GF baking powder
- 1 teaspoon xanthan gum
- 2⁄3 mug/175g caster sugar
- 100g packet chocolate chips
- 2 eggs
- 100g melted butter, measure

- 2⁄3 mug/200ml milk
- Preheat the oven to 180˚C fan oven/200˚C/gas 6. Prepare 18 muffin cases in tins.
- Put the dry ingredients in a large bowl.
- Mix together the wet ingredients in a large jug and add to the bowl. Mix well, but do not beat.
- Spoon into the muffin cases. Makes 24 using small cases, or 18 if using large.
- Bake in the oven for 25 minutes. The muffins should spring back when gently pressed. If you use smaller cake cases, you will only need to cook them for about
- 20 minutes.
