Chocolate Dipped Cherry Cookies with pistachio nuts


  1. Beat the butter and sugar together until smooth.
  2. Add the egg, vanilla and almond extract. Beat together.
  3. Add the flour, cherries and pistachios. Mix together to form a firm dough. Form into a long sausage and cover with clingfilm. Refridgerate for an hour.
  4. Preheat the oven to 180ºC fan oven/200ºC/gas 6. Grease 2 baking trays.
  5. Cut the dough into 1/2cm slices and place on the trays. It should make about 30 cookies.
  6. Bake for 12 minutes. Leave to cool.
  7. Melt the white chocolate in a bowl over a pan of simmering water. Once the cookies are cooled, dip one end into the melted chocolate. Place on a sheet of greaseproof paper until the chocolate has set.



  • 150g butter (measure using packet), softened
  • 1/2 mug/120g sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 1/3 mugs/225g self raising flour
  • 1/2 mug/100g glace cherries, chopped
  • 1/4 mug/40g pistachios, chopped
  • 200g white chocolate
