Canellini Bean & Mango Salad with Fried Halloumi

Ingredients
Dressing
- 3 tablespoons mango chutney
- 2 tablespoons olive oil
- juice of a lime
- 1 tablespoon olive oil
- 250g pack of halloumi, sliced
- 4 plum tomatoes, roughly chopped
- 1 red pepper, roughly chopped
- 1 ripe mango, peeled
- and chopped
- 2 tablespoons freshly
- chopped coriander
- 400g tin cannellini beans, washed and drained
This is a good, quick and easy, Saturday lunchtime dish. The mango and lime dressing is so fresh and delicious.
- Mix together the dressing ingredients and set to one side.
- Heat the oil in a small frying pan and fry the halloumi on a fairly high heat, until it is browned on both sides, and season. Remove from the pan and chop into small cubes.
- Mix together the tomatoes, peppers, mango, coriander and beans and season well. Add the halloumi and mix.
- Serve everything together and drizzle the dressing over the top.
