Butter Almond Slices Recipe

  1. Preheat the oven to 180ºC fan oven/200ºC/gas 6. Grease and line a 20 x 30cm baking tray.
  2. Heat the butter in a small pan and allow to bubble gently until it begins to turn brown. Take off the heat and allow to cool.
  3. In a bowl, mix together the sugar, flour and ground almonds.  Add the egg whites and beat until smooth.
  4. Gradually add the melted butter, beating at the same time. Add the vanilla and almond extract and beat well.
  5. Pour into the lined baking tray and even out. Sprinkle the almonds over the top.
  6. Place in the oven for 20 – 25 minutes, The top should be lightly browned and the mixture spring back when pressed.
  7. Leave to cool before cutting into any shape you like!



  • 120g butter, measure using packet
  • 1 mug/180g icing sugar
  • 1/2 mug/75g self raising flour
  • 1/3 mug/25g ground almonds
  • 4 egg whites
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 2 tablespoons flaked almonds
