Blueberry Tart Recipe

method

  1. Preheat the oven to 180ºC/200ºC/gas 6.
  2. Make the pastry for the base, by rubbing in the butter and flour and adding enough liquid to make a soft dough. You can use a food processor.
  3. Roll out the pastry and line a flan tin. Soften the jam and spread over the base. Add the blueberries and spread over the jam.
  4. Rub the butter into the flour for the topping. Add the sugar and the almonds. Sprinkle over the top.
  5. Place in the oven for 30 minnutes, the top should be lightly browned and the pastry cooked.

Base

  • 1 1/2  mugs/250g self raising flour
  • 125g butter
  • 1 egg, beaten and made up to 1/3 mug with water

Topping

  • 3/4 mug/140g  self raising flour
  • 100g butter
  • 1/3 mug/50g brown sugar
  • 1 mug/100g flaked almonds
  • 3 tablespoon good blackcurrant jam
  • 150g blueberries
