Ingredients
Dressing
- juice of 2 limes
- 2 tablespoons olive oil
- 1 teaspoon sugar
- salt and pepper
- bag of mixed herb leaves
- 400g tin puy lentils, drained and rinsed
- 250g cherry tomatoes, each cut in half
- 4 spring onions, chopped
- 1 yellow pepper, chopped
- 2 ripe avocados, peeled and cut into chunks
- 1 tablespoon freshly chopped parsley
- 1 tablespoon freshly chopped coriander
- handful pine nuts
- 100g feta cheese, crumbled
- Mix together the dressing ingredients.
- Arrange the herb leaves on the plates.
- Mix together the salad ingredients (apart from the feta) and divide between the 4 plates. Sprinkle the feta over the top.
- Add the dressing.
