Apple and Celery Soup


  1. Heat the butter in a large saucepan and add the onion, potato and celery. Fry until the onion begins to soften.
  2. Add the apple, water and stock. Season well with salt and pepper. Bring to the boil and then turn down to simmer for 15 minutes.
  3. Blitz with a hand-held blender. Add the milk and bring back to the boil.
  4. Serve with the chives sprinkled over and some crusty bread, or cheese on toast.


  • 25g butter (measured from packet)
  • 1 onion, sliced
  • 1 medium potato, cut into chunks
  • 1 head of celery, trimmed and sliced
  • 1 medium cooking apple, peeled and cut into chunks
  • 2 mugs water + 1 tablespoon concentrated liquid veg stock, or a cube
  • 1 mug milk
  • 1 tablespoon freshly chopped chives
  • salt and pepper
