Ingredients
- 285g all butter Madeira cake
- 1 teaspoon almond extract
- 2 x 410g tins apricots, roughly chopped and the juice of 1 tin reserved
- 500g ready made vanilla custard
- 300ml double cream
- 2 tablespoons toasted flaked almonds
- 4 amaretti biscuites, crushed
- Cut the madeira cake into 2 cm cubes and spread in the bottom of a trifle dish.
- Add the almond extract to the apricot juice and drizzle over the cake.
- Add the apricots and gently mix together. Pour over the custard.
- Beat the cream until it forms soft peaks and spread over the top and sprinkle with the almonds and the amaretti biscuits.
