Ameretti and Apricot Trifle

method

  1. Cut the madeira cake into 2 cm cubes and spread in the bottom of a trifle dish.
  2. Add the almond extract to the apricot juice and drizzle over the cake.
  3. Add the apricots and gently mix together. Pour over the custard.
  4. Beat the cream until it forms soft peaks and spread over the top and sprinkle with the almonds and the amaretti biscuits.

 

Ingredients

  • 285g all butter Madeira cake
  • 1 teaspoon almond extract
  • 2 x 410g tins apricots, roughly chopped and the juice of 1 tin reserved
  • 500g ready made vanilla custard
  • 300ml double cream
  • 2 tablespoons toasted flaked almonds
  • 4 amaretti biscuites, crushed
