Alternative to Spaghetti Bolognese – Trottole Sausage Bolognese Recipe with fresh tomatoes and basil

method

This is a Brilliant weekday alternative to Spaghetti Bolognese. The chilli is optional if you have younger children.

  1. Heat the oil in a wok or large frying pan. Add the onion and garlic and fry until the onion begins to soften.
  2. Take the skins of the sausages and break up. Add to the pan and fry until they begin to brown.
  3. Add the water, stock cube, tomatoes and tomato puree. Bring to the boil and then turn down to simmer for 5 minutes. Add the chilli if you are using it and season well with salt and pepper.
  4. Meanwhile cook the pasta, drain and combine with the sausage mixture.
  5. Sprinkle the basil over and serve.

  • 1 tablespoon olive oil
  • 1 red onion, chopped
  • 2 cloves garlic, chopped
  • 500g sausage
  • 1 mug water + 1 vegetable stock cube
  • 6 medium tomatoes, chopped
  • 1 tablespoon tomato puree
  • 1 fat red chilli, sliced (optional)
  • 2 mugs Trottole pasta
  • 2 tablespoon freshly chopped basil
  • salt and pepper
