almond cookies with white choc chips recipe

Ingredients
- 125g softened butter (measure using packet)
- 1 mug/210g soft brown sugar
- 1 egg
- 1 teaspoon almond extract
- 1 1/2 mugs self raising flour
- 100g packet of white chocolate chips
- 1/2 mug dessicated coconut
- 1/2 mug chopped toasted almonds
- Pre heat the oven to 180ºC fan oven/200ºC/gas 6. Grease 2 baking trays.
- Beat the butter and sugar together until pale in colour.
- Add the egg and the almond extract and beat until smooth.
- Add the flour and chocolate chips. Gently mix together to form a soft dough.
- Divide the mixture into approximately 30 small balls.
- Put the coconut and the almonds on a plate and mix together. Press the dough balls into the coconut and almonds.
- Place the balls on the baking trays, about 5cm apart as the dough will spread in the oven.
- Place inthe oven for 14 minutes until the cookies are pale brown. Leave to cool on the trays. The cookies should be crunchy on the outside and a bit chewy on the inside.
