Tuscan Bean Soup Recipe

method

  1. Heat the oil in a large saucepan. Add the onions and fry until they begin to soften.
  2. Add the garlic, beans, water and stock and bring to the boil.  Simmer for 5 minutes.
  3. Whizz with a hand-held blender. Add the lemon juice and season with salt and pepper.
  4. Serve with some freshly chopped parsley on top and some good, crusty bread.

 

Ingredients

  • 2 tablespoons olive oil
  • 2 onions, sliced
  • 4 cloves garlic, finely chopped
  • 2 x 400g tins cannellini beans, drained and rinsed
  • 3 mugs water + 2 veg stock cubes
  • juice of 1/2  lemon
  • salt and pepper
  • chopped parsley to serve
